Description: 

This is a quick and easy meal and really flexible depending on how many carbs you allow yourself. Yummmmmmmmmmmy!

Preparation time:

Ingredients: 

  milk (little squidge)
4 eggs (large, or 5 medium)
1 bunch chopped meat (to taste)
1 bunch chopped veggies (to taste)
1 butter (as needed in pan)
1 pinch salt (to taste)
1 pinch pepper (to taste)
  cheese (your fav, grated)

Instructions: 

Preheat oven to 200 C. Keep one burner on medium for the initial cooking, and turn one burner on medium/low to use later.

Whisk the eggs, milk, and salt & pepper in a bowl. Only add enough milk to make it a creamy egg mix, not too runny.

Sautee the veggies & meat of your choice in the butter. Cook until tender.

Pour the egg mixture over the veggies and transfer to the lower heat burner. DON'T STIR! just let it sit there and cook for 10 minutes. The top may still be a bit runny, but the insides will be cooked.

Sprinkle liberally with cheese. Put the entire skillet into the oven and cook for 5-10 minutes, depending on how you like your cheese. I cook it until it *just* starts getting brown (which is 8-10 minutes) so the cheese is gooey and the eggs are cooked all the way through.

This will cut into slices like a quiche. Serve immediately.
