Description: 

This is a good recipe for when you've got extra veggies to cook up and no idea where to put them. It is slightly higher carb due to the tomatoes, but unless you are on strict induction (or hate tomatoes!) it is still low carb and has never halted my weight loss.

Preparation time: 

1 hour

Ingredients: 

3 chicken breast (boneless)
2 cans chopped tomatoes (Heinz, garlic & onion)
2 onion (sliced into rings)
1 green pepper (sliced into strips)

Instructions: 

Cook the chunked chicken in oil in a large skillet, and really just pour everything else in and let it cook & simmer away for about a half an hour until the veggies are a bit soft. That’s it. I put in as many veggies as possible because, without rice or pasta, the veggies are where you get the “bulk” of the recipe. It’s quite good, and flexible, so you can throw in leftover veggies etc.
