Squash, Pear and Onion au Gratin

Ingredients: 

1⁄2 pound squash (butternut, buttercup or banana)
1 onion (large, sliced into rings)
2 tablespoons butter (or margarine, 1 T melted)
1 pear (medium, peeled and thinly sliced)
2 tablespoons walnuts (chopped)
1 tablespoon romano cheese (grated)
2 tablespoons parsley (fresh snipped)

Instructions: 

1. Peel squash; slice crosswise into 1/2 inch slices. (if using butternut, first cut the squash in half lengthwise.) remove and discard seeds. set squash aside.

2. Cook onions rings in 1 tbls of hot butter for 5-10 min or until tender.

3. Arrange half of the squash slices in the bottom of an 8x8x2inch baking dish. Top with half of the pear slices. Repeat Layers. Sprinkle lightly with salt. Cover with cooked onions. Bake covered in 350F oven for 45 minutes or until nearly tender.

4. Meanwhile, in a small bowl combine bread crumbs, bacon, walnuts, romano cheese, and the 1 tbls of melted butter; sprinkle over the vegetables. Bake uncovered, about 15 minutes more or until tender. Sprinkle with fresh parsley if desired.
