Instructions:
Preheat oven to 325F or gas mark 3.
In a large oven-proof pot, melt the butter with the oil. Add bacon and fry until very crisp. Add mushrooms and fry until they basorb and release the oils. Add onion, garlic, and herbs and stir. Move mixture to outside edge and add chicken. Brown well on all sides. Sprinkle with a little more herbs.
Pour in wine and add bay leaf. Cover pot and put in oven. Bake 1 1/2 - 2 hours until chicken is tender.
Remove chicken from pot, remove bayleaf and discard. Add flour or cornstarch to the cooking liquid to form a gravy.
Carve the chicken, serve with boiled potatoes and brussels sprouts or green beans (the rosemary & sea salt boiled potatoes are excellent here.) Pour gravy over if desired.
