Easy Potato Soup

Description: 

For cold nights, an easy to cook potato soup. Modified from 'Saving Dinner' cookbook.

Preparation time: 

1 hour

Ingredients: 

4 potatoes (peeled and quartered)
2 onions (or three, chopped)
3 cloves garlic (or four, pressed)
  kielbasa (or other meat (ham/sausage))
2 chicken stock cubes (+ water, mixed)
1 teaspoon thyme
1⁄8 teaspoon cayenne pepper
  salt
  pepper
2 cups milk

Notes: 

Ketchup or hot sauce goes well with it.

Instructions: 

In your soup pot, sautee chopped onions in oil or butter until see-through. Add meat, sautee for a wee while. Then add potatoes and garlic, cook for 3 minutes or so. Add chicken stock, bring to boil. Add thyme and cayenne pepper. Simmer for 10 or 15 minutes to soften potatoes.

Take your potato masher and mash your potatoes (in soup pot). Leave a little chunky, for texture. Add two cups milk, let it warm (not boil), salt & pepper to taste, and now you have a lovely soup for a cold night.
