Ingredients:
1 can sweet corn
1⁄2 pint double cream (thick)
2 teaspoons sugar
1 pinch salt
1 pinch pepper
cheddar (grated, to taste)
breadcrumbs
1 tablespoon butter
1 tablespoon flour (all-purpose/plain)
Instructions:
Combine the corn, cream, salt, sugar and pepper in a saucepan. Bring to the boil and simer for 5 minutes.
Melt the butter in a separate pan over a low heat and add the flour. Stir to make a paste.
Add the butter - flour roux to the corn. Mix well and remove from heat.
Put the corn mixture in a casserole dish and sprinkle the top with breadcrumbs and grated cheese. Place under a hot grill until golden brown and bubbling
