Cranberry Pecan Bars




These make a lovely snack at the holidays and are one of my favourites. Tart and sweet at the same time.

Preparation time: 

1 hour


1 cup flour
2 tablespoons sugar
2 eggs
2 tablespoons milk
1 tablespoon orange peel (grated)
1 teaspoon vanilla extract
1 cup cranberries (chopped)
2 cups coconut (shredded)


First, mix flour, 2 tbl sugar, 1/3 cup butter and 1/2 cup finely chopped pecans. Put in 9x13, spread and bake 350 for 15 mins.

Mix remaining sugar with 2 tbl flour and eggs, milk, peel and vanilla. Fold in cranberries, coconut, chopped pecans and spread over crust. Bake 25 mins at 350.
