Description:
Light and crumbly shortbread with mini chocolate chips are fab!
Preparation time:
5 minutes
Ingredients:
1 cup butter (softened)
1⁄2 cup sugar (powdered, confectioners)
2 cups cornstarch
1 cup chocolate chips (mini)
1 1⁄2 cups flour
Instructions:
Beat butter and powdered sugar with mixer until light and fluffy. Sift flour and corn starch together and mix gradually into butter/sugar mixture. Once combined, add mini-chocolate chips.
Shape into 1 1/4 inch balls and bake at 330 degrees for 18 to 20 minutes until bottoms are light golden brown and cookies feel mostly set.
Allow to cool and keep in an airtight container.
